Sometimes, however, you will need to pick the fruit a bit sooner. Picking fruit at the right time can keep your fruit trees happy and healthy for many years! They need time to mature. Any fruit that is produced in this time should be harvested as soon as you see it so the tree can focus as much energy as possible into growing and maturing. While some arborists disagree on this procedure, you ultimately just need to do your research and do whatever you think is best for your trees.

A special project is crusading for apples on the Western Slope. The Apple Core Project is a team of two passionate apple advocates from Norwood who are mapping and documenting the history of heirloom fruit trees in the area. According to project founder Jen Nelson, heirloom apples have the potential to be an economic boost for farmers on the Western Slope. Melanie Eggers is Nelson's partner in the endeavor. Heirloom apples have not been genetically modified like most modern apples, so they have a higher nutrient content. The unique growing conditions on the Western Slope also cause the apples to be sweeter. Modern apples, like the red delicious apple, have been modified specifically for their appearance, so the flavor wanes over the years.

She and husband Robert have collected grafting material from apple trees in old orchards and those growing wild on roadsides all over Southland as part of what is called the Open Orchard Project, a group dedicated to growing, propagating and getting all the best heritage apples back into gardens and orchards around their region. The taste test is an important factor in identifying named heritage varieties, and in working out which of the wild apples are worth spending more time on propagating. Some are quite boring, some are nice raw, some are nicer stewed. The Guytons were inspired to begin their apple project after having little success growing modern fruit tree cultivars in the food forest on their 0. It had just a few of the apples and other fruit trees originally brought over to New Zealand by European settlers from the s onwards, so the Guytons took scionwood for grafting. The great Southland apple tree hunt began in earnest in when the Guytons heard about a few more old orchards.
